No matter which university you're applying to, it is essentially a must to study Biology and Chemistry at Higher Level in the IB. Not only do universities require these subjects, but without a solid foundation in them, it will be very hard for you to keep up with the course content at university. Medicine is a very demanding course, so having a strong base in Biology and Chemistry is crucial. Furthermore, many universities also require an entry exam (such as the UCAT, required by top UK universities), and preparing for it without these subjects is extremely difficult.
Apart from these, many universities also require or at least prefer students to take Mathematics AA rather than AI. There is, however, generally no need to take it at HL.
As for the EE, while universities do not require students to write it in a specific subject, it may be beneficial to write it in Biology or Chemistry, as this will help you develop research skills that are invaluable at university. It may also give you the chance to explore an ambitious topic from the field, which you can then mention in your application or interview.
